1 Tbsp plain fat free greek yogurt
1 1/2 tsp dijon mustard
1/4 tsp kosher salt
1/4 tsp black pepper
3/4 cup chickpeas , rinsed and drained
1/2 cup grape tomatoes, halved
1/2 cup cucumber, chopped
2 Tbsp fresh parsley, chopped
1 Tbsp dill , chopped
1 medium scallions, chopped
1 item hard boiled egg, chopped
In a medium bowl, whisk together the lemon zest and juice, yogurt, mustard, salt, and black pepper. Stir in the chickpeas, tomatoes, cucumber, bell pepper, parsley, dill, and scallion. Add the egg and toss gently to combine.
